I used to feel like that all the time. In fact, I still feel like that occasionally.

What works for me is I tell myself I don't have to do this forever. I'm just going to be vegetarian for today, for sure, and deal with tomorrow when it comes.

It's the same technique many alcoholics and other addicts use successfully. "Today I will not drink" becomes "Today I will not eat meat." Just for today. Tomorrow, you can make a new decision (so far I always decide not to eat meat again -- just for that day).
