I have a problem wasting fruit when I make fruit salad. I am a solo person in my household, and when I make fruit salad, it tends to go bad before I can eat it all. I was wondering if using fresh lemon juice helps keep from spoilage?

Lemon juice doesn't stop spoilage, but it can stop the browning that bananas in particular do. I'm with sunshine, smaller batches. Or bigger bites.

what about freezing half of what you make? or making even larger batches and then breaking them down into zip lock bags...?<br><br>
Then when you wanted some, you can just pull out a baggie and voila! I freeze mixtures of fresh fruit for my son's lunches, pop them in in the morning and by his lunchtime, they are thawed, but still icey cold...

It would break down and be mushy when thawed... unless you chose fruit that is good semi frozen, like black cherries, peaches, blueberries, melons, they could be eaten while crunchy, what a yummy summer treat, even drizzled with juice.

Yes definitely make smaller salads! Whole fruit has the perfect packaging. The moment you cut it, it starts to decay rapidly. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

Yes, fruit loses some of its vitamins when stored. But if you do end up storing it, make sure it's in an airtight container, and away from light in the fridge, just to make sure <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br><br><br>
Why not give some to your neighbors if you can't finish it <img alt="" class="inlineimg" src="/images/smilies/wink3.gif" style="border:0px solid;" title=";)"> If I was your neighbor, I'd be more than happy to have some. I'm sure it tastes delicious!!

I never see my neighbors, they are all pretty crazy, but maybe I can make a new friend that way.. or bribe my apartment managers, by giving them some.<br><br><br><br>

Ah, Natalie, you took my idea!!!LOL When I make too much fruit salad I always turn it into a smoothie the next day. If you freeze the salad in small containers you can use those in a smoothie as well. Just add a banana or yogurt, the frozen chunk of salad and some juice or milk and zap it all together in the blender. Yummmmm.
