I've been a member of a gourmet cooking club for the past 15 years. This is the first time that I will be hosting a dinner since I've eliminated all animal products from my diet. Whoever hosts sets the theme and prepares the main course. I've given everyone the heads up that our "theme" this month is vegan cooking. They're all up for the challenge. (Even the Frenchman is committed to cooking without butter, cream, or cheese!)

I'd love some ideas for a knock out main course. I am a good cook and I don't mind an ambitious or complicated recipe. Keep in mind that this is for a group of consummate foodies. They are adventurous and willing to try just about anything. I'd prefer to skip the fake meats and make something fresh, seasonal, and fabulous.

With all that in mind... any suggestions?

Make something inspired by this cookbook!

I'll take a look later and see if I can suggest something specific.

Besides that, I have an amazing black garlic seitan recipe that goes in puff pastry with a truffle and mushroom medley and is incredible.

I've made this lasagna a few times (minus the zucchini sauce) and it is sooooo good! I guess I wouldn't call it 'gourmet'...AHIMSA's black garlic seitan recipe sounds amazing if want gourmet...but the lasagna did pass the omni test with flying colors!! And you could add veggies, like zucchini, spinach or eggplant, between the layers.

http://www.veganpeace.com/recipe_pag...eamLasagna.htm

That seitan in puff pastry recipe sounds like exactly the kind of thing I'm looking for. The lasagna recipe looks fabulous and will likely end up being my dinner at some point (I've bookmarked it!), but probably not for this specific dinner.

I check out a cookbook from the library called "Great Chefs Cook Vegan". You might look there.
