For best results with tofu, it is best to freeze the tofu. When ready to use, thaw, then cut into whatever shape you want and then press out the water. To press it, put the cut tofu between two towels on a baking sheet, put another baking sheet or a cutting board on top and then something heavy like canned food on top. Let it sit for a half an hour or so and then pat dry before marinating or cooking.
