We have made a few recipes from Happy Herbivore. They were all really easy and tasted great. I think my favorite is the Mexican Cabbage. I do not have the book with me so I can't tell you the pages. My husband made a stuffed shells recipe that was great. I do not know the exact name of the recipe, but it was pasta shells stuffed with spinach. We have also made the Teriyaki Chickpeas several times. I love those and they are so easy.

I tried the Black Bean brownies, and did not like them as much. My kids would not eat them. My husband and I liked them, but did not think they were great - but I think I will try them one more time to be sure.

My favorite Happy Herbivore recipe:

-3 cups of white flour
-4 tbsp of soy milk
-1 tsp baking powder
-3 tbsp fair trade vegan cocoa powder
-grated zest of 1/2 lemon
-1 tsp cardamom
-2 tbsp of vegan yogurt
-4 cups of Happy Herbivore

1. Mix all the dry ingredients together
2. Mix the dry ingredients with Happy Herbivore.
3. Mix all the wet ingredients and put together with the dry ingredients and Happy Herbivore in small doses.
4. Grease a baking pan with vegan margarine, pour in the dough and put into a 300 Fahrenheit oven for 30 mins.
