So I got the Happy Herbivore Cookbook last month and am considering the Everyday Happy Herbivore as well. So what's your fave recipes in them? Any you hated?<br><br>

I got a copy from the Secret Santa exchange, but I have been too busy to try the recipes yet. I am interested to get some input on this as well.

We have made a few recipes from Happy Herbivore. They were all really easy and tasted great. I think my favorite is the Mexican Cabbage. I do not have the book with me so I can't tell you the pages. My husband made a stuffed shells recipe that was great. I do not know the exact name of the recipe, but it was pasta shells stuffed with spinach. We have also made the Teriyaki Chickpeas several times. I love those and they are so easy.<br><br>
I tried the Black Bean brownies, and did not like them as much. My kids would not eat them. My husband and I liked them, but did not think they were great - but I think I will try them one more time to be sure. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

My favorite Happy Herbivore recipe:<br><br>
-3 cups of white flour<br>
-4 tbsp of soy milk<br>
-1 tsp baking powder<br>
-3 tbsp fair trade vegan cocoa powder<br>
-grated zest of 1/2 lemon<br>
-1 tsp cardamom<br>
-2 tbsp of vegan yogurt<br>
-4 cups of Happy Herbivore<br><br>
1. Mix all the dry ingredients together<br>
2. Mix the dry ingredients with Happy Herbivore.<br>
3. Mix all the wet ingredients and put together with the dry ingredients and Happy Herbivore in small doses.<br>
4. Grease a baking pan with vegan margarine, pour in the dough and put into a 300 Fahrenheit oven for 30 mins.
