Faux Cream Cheese Frosting<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
1 package vegan "cream cheese" (I used Toffutti's version)<br><br>
1/3 cup Earth Balance or other vegan margarine, softened<br><br>
1 tsp vanilla<br><br>
Approx. 3 cups vegan confectioners sugar<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
beat cream cheese and margarine together very well with a fork (an electric mixer is better if you have one)<br><br><br><br>
Add the vanilla, then add the sugar a cup or so at a time, until the right consistency is reached.<br><br><br><br><br><br>

I noticed that once when I used very soft margarine, I had to use a large amount of sugar to compensate. The frosting tasted okay, but was a bit sweeter.
