In my opinion, the key to making really killer falafel is to make it the Lebanese waywith a combination of fava beans and garbanzo beans, instead of just straight garbanzo beans. Ill be happy to post my recipe if youd like.

Please do post. My favorite place for falafel is a Lebanese place that does the fava/garbanzo combination.

I would recommend baking them. It make s them really good, and then you don't feel guilty when you eat the whole batch

What kind of oil do you guys use for frying them? I've been on a falafel kick lately and all I have in the house is olive oil, but the falafel seem to come out really dry that way.

Dried green peas have got to be my favourite pulses to turn into falafel. Yellow ones work too, but they seem to be at bit on the dry side by comparison.

I just made some yesterday!

I didn't make em from scratch though- used a mix hehehe

I was the "Near East" brand

Just mixed the mix w/ water and let sit for 10 minutes, then shaped into patty balls and deep fried in some olive oil for 8 mins (4 on each side)

They were sooooo good
