Hi,

Can you please give a example of what you eat all day.

I know you eat Vegetables, Beans, Nuts (Dairy if you want to) Etc.

I am lost


How much do you eat a day?

How much of what?

Is there rules? I know you have to have a certain amount of nutrients.

Say you can only have this much beans or fruit. You must eat this much .... to get your nutrients.

I can not find a book or web site that explains it in easy details.

Here are some menus created by veg dieticians:

For me, I generally eat something like this:
Breakfast: oatmeal, fruit, coffee and water
Snack: fruit or nuts and water
Lunch: pasta with veggies and tofu or a bean burrito or a veggie burger and fries
Snack: crackers, chips, fruit, or raw veggies
Dinner: beans and rice with a side of steamed veggies and a glass of juice with seltzer water

Sometimes I have dessert, sometimes I have a beer or wine, sometimes I skip a snack, I often slightly overeat. I take a B12 or multivitamin regularly. And I use iodized salt on my steamed veggies. I exercise at least three times a week (jog 2-3 miles or swim 2000 yards) and I play with my toddler son regularly. I am in good health.
