Eggplant pepper parmesan sandwich

Suitable for a: vegetarian diet

Ingredients:

INGREDIENTS

1 eggplant, seeded and cut lengthwise into 1/4 inch slices

1 red bell pepper, sliced into thin strips

salt and pepper to taste

1 French baguette

2 ounces soft goat cheese

1/4 cup tapenade (olive spread)

1/4 cup grated Parmesan cheese

Instructions:

DIRECTIONS

Preheat the oven broiler.

Place the eggplant and red bell pepper on a medium baking sheet, and season with salt and pepper. Broil 5 to 10 minutes, until tender and slightly browned.

Cut baguette in half lengthwise. Spread bottom half with goat cheese, followed by tapenade. Layer with eggplant and red pepper, then sprinkle with Parmesan cheese. Cover with top half of baguette. Cut into 4 pieces. Serve hot or cold.

We have switched to a vegan diet, and this is how we modified this recipe: We nixed the tapenade which has anchovies and nixed the cheese.

Instead we chopped the veggies into bite sized pieces, while veggies are warm (nuke if it is leftover), I mix in Veggie Shreds parmesan, mozarella and romano flavored cheese alternative. I put this on tortillia, top with tabouleh, roll and enjoy!

Here's a simple vegan tapenade recipe to use if you'd like:

1 1/2 cups Kalamata or Gaeta olives, pitted

3 tablespoons capers, drained

2 garlic cloves, finely minced

1/4 cup minced fresh parsley leaves

1/2 teaspoon salt

1/8 teaspoon freshly ground black pepper

1/4 cup extra virgin olive oil

Chop the veggies as fine as you want them, stir in the salt, pepper, and olive oil and you're done.
