Eggless "Egg" Salad<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
1 16. oz block extra-firm tofu<br><br>
1/2 cup Vegenaise<br><br>
1/4 cup pickle relish<br><br>
1 T. dijon mustard<br><br>
1/4 teaspoon tumeric<br><br>
salt & pepper<br><br><br><br>
optional: finely diced onion, finely diced celery, a pinch of curry powder<br><br><br><br><br><br>
Instructions:<br><br>

The secret of this recipe is to get the correct texture. You want to have your tofu as dry as possible. I slice my block into thirds, and press each slice on papertowels or kitchen towels under a weighted plate for 30 minutes. Once your tofu is dry, crumble it into a bowl and add the other ingredients. The 1/2 c. vegenaise makes a stiff "egg salad" - use more if you like it more moist.<br><br><br><br><br><br>

Serve on bread for sandwiches or on lettuce for a salad.

A tiny pinch of Indian "Black Salt" gives this an "eggy" flavour too.<br><br><br><br>
Add enough mayo, celery, relish, green onions bits and whatever other goodies you like, and no one will ever know there's (*gasp*) tofu in here!<br><br><br><br>
I've fooled many an omni with my "egg salad sandwiches" made very similar to this!

Ohh, I need to pick up a block of tofu next time I'm at the grocery store.<br><br><br><br>
I've also been wanting to get black salt, but the last few places I've seen it, it's been hella expensive. Anyone know where to find it more inexpensively?
