What is a vegan substitution for a baking recipe that requires egg yolks?

lots of different egg replacers, i haven't encountered one specifically for egg yolk yet.<br>
can you post the recipe so we can see how the egg yolks are used, then maybe can recommend a better sub

Yeah, depends on what recipe it is and how many egg yolks etc. For example, I modified a shortbread recipe that called for 1 egg yolk by adding in a bit of EnerG Egg replacer with a tsp. each of of coconut oil and water. Worked fine.

I guess I might ask this also- what replaces an egg yolk in a custard? My husbands favorite pie is the Torta Della Nonna and I want to attempt to veganize it but it looks like it might be challenging.<br>

IDK- its more dairy and egg than not. It might not come together.

yum i luv pinwheel cookies.<br>
the yolk doesn't do much but bind in this recipe so ener-g would be fine, cornstarch or tapioca starch would work too (mixed with some water or plant milk)

Personally, I'd probably use silken tofu and I believe you can use agar-agar powder to thicken/gelatinize things. Good luck!<br><br>
