Does anyone know how to sub for those fluffy peak egg whites? the kind that you have to whip up in the recipe? I know how to replace the yolks, just not sure what to do with the whites...I don't think I could beat a banana to the proper consistency. I can post the recipe if you think it may help...

AFAIK, there's no vegan substitute fluffy egg whites. There's a few subs that duplicate egg's binding capabilities and a few that might duplicate egg's structural capabilities, but AFAIK there's nothing that will give fluffy or stiff peaks like egg whites can.

Please post the recipe anyway (if you want) - there might be a vegan version existing that someone can link you to.
