I found a vegan recipe for biscotte cookies that calls for dry egg replacer mixed with water. Could I use banana in its place? I would love banana flavored cookies and figure that the banana would shine through. My mother wants the recipe worked out to. She plans on trying banana with walnuts.<br><br><br><br>
(the sicilian that does not cook much!!!)

I have no idea if you can use banana instead....but can you post the recipe? I've been searching for a vegan biscotti one. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

I think it would work. I've seen them with applesauce. You should use a couple of tablespoons of oil too. Does the recipe call for fat? They are supposed to be hard, but with only applesauce they were practically inedible! With just a bit of oil, they were great. It sounds like a great idea though. Let us know how the banana works.

I am not a fan of fat. I don' have the recipe right here but I remember flour, egg replacer, sugar and, optional nuts.<br><br>
I don't think applesauce would be great in a hard cookie. Hoever could you have not baked them long enough? The cookies call for 50 minutes of baking time and steps in between bakng to get them baked. Plus they get hard as they dry. Fresh out of the oven it says they are a bit moist.

Oh, I think I didn't make it clear! I meant that using only applesauce makes it waaaaay too hard. I mean like a rock. It's not enjoyable. I mean, you want to be able to break it off when you bite it! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"> I know biscotti is supposed to be hard, but not inedible!<br><br>
But maybe a banana would work by itself, I don't know. You'd have to experiment, I guess. But if it comes out too hard like the applesauce ones, then adding a bit of oil will help it. It sounds delicious. It would be great if it didn't need the fat!
