Easiest, Healthiest BEST Strawberry "Ice Cream"

Suitable for a: vegan diet

Ingredients:

------------------------------------------------------

1 package soft silken tofu

about 3 cups unsweetened frozen strawberries

1.5 tbs vanilla

1 C brown rice syrup (or maple syrup)

splash of soymilk (if necessary)

Instructions:

------------------------------------------------------

1. Puree all ingredients in a blender, pour into container.

2. Freeze.

Makes 7-8 servings

I feel good about serving this to my kids. Omnis love it, too!

VARIATIONS:

Vanilla: Replace frozen strawberries with frozen banana.

Chocolate: Blend tofu, vanilla, 3 cups chopped frozen bananas, 1/3 C brown rice syrup and 2/3 C melted vegan chocolate. Stir in vegan chocolate chips and freeze. optional: add 1/4 C peanut butter

"Purple" ice cream: Replace half the strawberries with frozen blueberries.

I wondered just last night if there was a way to make vegan ice cream w/o an ice cream maker!

now to clear freezer space....

I tried to make pudding once with tofu and I didn't like it. I cold taste the tofu. I'm thinking this might be similar, but I'm going to have to try it! It sounds soooo good!!

This sounds a lot easier than the way that i make ice cream now!

Do you know if it's ok to use fresh strawberries instead of frozen strawberries? I have never seen frozen strawberries in the supermarket in New Zealand but I can easily get fresh ones...

I didn't read the ingredients right, so I put 1 cup of soymilk, and a splash maple syrup, but it still turned out DELICIOUS! thx for recipe!
