Boyfriend and I are getting tired of the restaurant thing and want to start cooking at home more. We were thinking of making fajitas tonight and need a good recipe. I am assuming it will involve stir-frying some peppers, but what spices do we use and in what quantities? Is there a good bean and rice recipe I can serve it with? Any tips or suggestions? I would love a good recipe for fool-proof fajitas if anyone can share.

Onions and peppers, stir-fried are essential, imo. Zucchini and eggplant, sliced thinly are my favorites to add for other veg. For the spice blend, I used something like this: <a href="http://busycooks.about.com/od/homemademixes/r/fajitaseasonmix.htm" target="_blank">http://busycooks.about.com/od/homema...aseasonmix.htm</a>. After the veg are cooked slightly, toss in some of the spices with a bit of water (and more oil, if needed) and just cook until they are the texture you'd like. You can make fancy beans and rice too, but we often just have brown rice and black beans with them, along with various toppings like salsa, guacamole, etc.<br><br>
Part of the fun of fajitas is throwing what you'd like in to the pan! <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D">
