Dhal Masala - quick and easy<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
1 large onion, diced<br><br>
1 clove garlic, crushed<br><br>
1-2 green chillies, finely chopped with seeds<br><br>
6 tomatoes, diced (or 1 can of diced tomatoes)<br><br>
1 cup green gram dhal (soaked over night and cooked for 5mins)<br><br>
1/2 tsp cumin seeds<br><br>
1 tbl vegetable oil<br><br>
1/2 tsp turmeric powder<br><br>
1/2 tsp garam masala<br><br>
1 tsp salt<br><br>
1/3 cup water<br><br>
Juice of 1 lemon<br><br>
2 tbl curry leaves (dried or fresh)<br><br><br><br><br><br>
1. Heat oil, add cumin seeds.<br><br>
2. Add onion, garlic, chillies and fry for 1 minute.<br><br>
3. Add tomatoes and fry for 2 minutes.<br><br>
4. Add lentils, salt, turmeric, garam masala and water.<br><br>
5. Cook for a few minutes, season with lemon juice and curry leaves.<br><br><br><br><br><br>
Additional comments:<br><br>
Serve with basmati rice.<br><br><br><br>
It tastes good when eaten straight away, but for maximum flavour cook it in the morning or night before and leave it to sit.
