So I came up with this recipe just playing around with some curry powders and different veggies I had in the house and it tastes so good!
What you need -
1 Cup Coconut Milk
2 tbsp Coconut creamer
1 tbsp Curry Powder mix
(Optional) 1 tbsp Tandoori Masala mix (I got it at World Market)
3 tbsp arrowroot powder
1. Add curry powders to coconut milk and creamer and bring to a boil.
2. Mix 3 tbsp arrowroot powder with 3 tbsp water and mix together.
3. Add Arrowroot mixture to coconut milk and curry while mixing.
4. Add salt to taste.
5. Simmer it until it is uniform in texture and color.
You can pour this over any cooked vegetables you'd like. I used a mix of red and green lentils, potatoes, and wild rice. I also really like chickpeas and peas in my curry as well! Oh and don't forget quinoa and tofu!
Simple, easy, and delicious!
