I bought some dry veggies at the fresh market today, tried them in the car and love them! Now I'm wondering if they were fried or dehydrated. I'll have to look the next time I go (may be a few weeks).

Anyhow, my birthday is coming up and I was thinking of asking for a dehydrator. Does anyone know if the vitamins are retained w/ this method of preservation? Also, will dry veggies come out crisp like the ones I had today or will they be chewy like some of the dehydrated apples I've seen.

They'll be chewy and leathery most likely. I used to dehydrate veggies for backpacking soup blends and such and they were always a bit on the chewy side, not so much as apples but not "crisp" either...

The crisp ones you had quite possibly were fried
or freeze-dried, both of which create that crisp texture - and I have no idea how to create those at home, sorry...
