Curry-Crusted Bananas<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>

3-4 bananas, cut in half, with each half cut legnthwise<br><br>
6 tbsp Earth Balance<br><br>
1 tsp curry powder (I used a bit more)<br><br>
crushed corn flakes<br><br><br><br><br><br>
Instructions:<br><br>

Preheat the oven to 450 F<br><br>
Melt the Earth Balance int the microwave, then mix in the curry powder. Roll each banana piece in the mixture, so that each piece is completely covered. Roll each curry-coated piece in the corn flakes, making sure they get coated completely. Place each banana piece on a baking sheet sprayed with Pam. If the corn flakes have trouble staying on the bananas, just kind of balance them on top when the bananas are on the tray.<br><br>
Bake for 6-10 minutes, making sure not to burn.<br><br><br><br><br><br>

This recipie is from Paula Dean on the Food Network channel, the lady who has a set of deep fryers in her kitchen.<br><br>
I was shocked to see a veganizable (?) recipie on her show, since most of her recipies end with "pour on 2 cups of heavy cream, six eggs, and top with bacon." But these bananas are awesome!<br><br>
I eat them for breakfast and snacks, but Paula says they are also good as a side for pork dishes (ew).
