So I have a freezer packed full of all kinds of vegetables from snow peas, cauliflower, broccoli, baby corn, carrots, mushrooms, green/yellow beans, sprouts, lima beans, red peppers, onion.....it goes on! They are all sliced and mixed already.<br><br>
I also have some curry powder and white rice (yeah I know, I'm all out of brown- this is all I got on hand)<br><br>
Usually I cook the rice and season it with curry powder, then serve it topped with all the veggies.<br><br>
This is good and all, but I wanted to try something new. I also got a crockpot for christmas that I've been dying to use.<br><br>
Does anyone have a recipe or any ideas as to what I can do.<br><br>
I really need to use up some of these veggies, and I'd like to give my crockpot a try as well.<br><br>
I don't have too much on hand right now, so I was hoping I could make something with out having to trek out to the store... <img alt="" class="inlineimg" src="/images/smilies/huh.gif" style="border:0px solid;" title=":confused:">

I have no idea about crock pots, but I'd be more inclined to cook the rice as follows:<br><br><br><br>
Briefly sauté a piece of ginger, a piece of lemongrass (squished beforehand), 4 cloves, 1 tsp cumin, 1/2 tsp turmeric and a pinch of cinnamon, add about a pint of stock and 250g (9 oz) rice and cook.<br><br><br><br>
While that's cooking, I'd stir fry some veg like the onions, peppers, mushrooms, baby corn and whatever sounds good and season with some soy sauce, sambal oelek (or some other kind of hot pepper) and a pinch of sugar. If you eat eggs, you can beat one with some black pepper, pour it into a pan and fry on high heat to tear it into strips. Err, if you have those spices on hand, that is.

I usually throw everything into the crock pot and add a large<br><br>
can of tomatoes .You could serve the veggies over cooked rice<br><br>
or add it uncooked to the pot to make a sort of stew.<br><br>
Maybe you could locate a crock pot recipe site.<br><br>
Let us know how it turns out,OK?

I'd just toss a tin of coconut milk or tomatoes with the bag of veg into the crockpot, add curry seasonings to taste, and let it simmer away until everything is heated through. You could add some chickpeas, potatoes etc as well if you like! Then serve over cooked rice.
