I checked out "Vegan with a Vengeance" from the library recently tried a couple recipes and really liked 'em so I ordered the book. I don't regret ordering the book cuz the Tofu Scramble is the best in the world and I'm sure most of the recipes are great. I happen to love the falafel and the pumpkin muffins, too.<br><br>
Anyway, I just got my book today and made the Fauxstess Cupcakes and they totally did not turn out for me. I think the Fluffy White Icing that gets piped into the middle should have called for confectioner's sugar rather than superfine sugar as the sugar totally did not dissolve for me and left my icing grainy. I beat it a good 10 minutes just like the recipe says, too.<br><br>
I read somewhere online that you can make your own superfine sugar by simply whizzing regular white sugar in your food processor a few minutes. That's what I did, but it still didn't work. Maybe you have to buy the storebought stuff? I can't find any around here, so I tried making my own, but it just didn't work out and was really disappointing considering the recipe is not exactly cheap and is not just a quick throw-together thing.<br><br>
Also, the Chocolate Ganache Icing is just wrong, as written. I followed the recipe exactly and it was a bitter, thick disaster. You're supposed to have an icing that you can dip your cupcake into, but this was way too thick for dipping and very bitter. I think it must have called for twice as much unsweetened chocolate as it was supposed to. I ended up fixing it by adding more soy milk, maple syrup, and even a couple tablespoons of sugar that the recipe didn't call for cuz I just couldn't part with any more expensive pure maple syrup. Before I fixed it, I know I followed the recipe exactly for the ganache icing, so it wasn't me. It was the recipe. I was so ticked by that point that I didn't even mess with the Royal Icing for the Squigglies.<br><br>
I'm just venting, but that was like majorly disappointing. My kids have wanted me to make this recipe for so long since they saw it in the library book, but they just didn't turn out the way I was hoping. I'm sure they'll still eat them and love them, but they're just not good enough for me. Maybe I'm a food snob.<br><br>
I'm not gonna get rid of my cookbook. I love Veganomicon and I also ordered Vegan Brunch, so I'm not trying to bash on the author or anything. The ganache icing recipe must have had a typo.

the cupcakes from that recipe are really good though!!!! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br>
I honestly haven't used the filling recipe, and when I make that cupcake, I core the center, and fill it with the frosting. I can assure you, her Cupcakes Take Over the world cookbook is fantastic! If you don't like that ganache recipe, there are tons of vegan ones on the web. I just tried a different one, and it was a bit too thick too, so it just needed a little thinning down.

Vegan Cupcakes take over the World by Isa is wonderful. By far the best vegan baking book we've found for deserts. check it out.

Isa's website used to have errata for VWAV, but they were lost in a board update. I posted a question about that recipe just now, though, because I can see trying it myself some time ...

I don't have the book in front of me, but assuming its the same as is posted on the website (<a href="http://www.theppk.com/2005/05/fauxstess-cupcakes/" target="_blank">http://www.theppk.com/2005/05/fauxstess-cupcakes/</a>) the recipe says BITTERSWEET chocolate which is entirely different than UNSWEETENED chocolate. That may have been one of your problems. I don't know about the filling though.

River- no way....Joy of baking is an awesome cookbook too, but that covers a little bit of everything, the Cupcakes take over the world, litterally is cupcakes and frostings, and info in the front of vegan baking tips.<br>
I have both, and wouldn't give up either!

Yes, it is the same recipe as in the book and I DID use unsweetened chocolate which, apparently, was wrong. My mistake. I still think the recipe may call for too much chocolate, though, cuz I don't see how simply using the right kind of chocolate would have affected how thick it turned out. I was expecting something like the consistency of creamy salad dressing, but this was clearly a thick frosting that had to be spread with a knife, not a dippable consistency. I doubled the recipe, so I used an entire 8 oz pkg. of unsweetened chocolate squares and it was just too much.<br><br>
I'm gonna get the right kind of chocolate and then add half the amount called for and add more if it seems like it needs it. I'll probably try this again next weekend and see how it works out.

Actually, I do have that book on order, too. I loved Veganomicon so much that I ordered everything with Isa and/or Terry's names on them. Them girls can COOK! LOL
