I made my first recipe from the Vegan cupcakes take over the world book. I made the basic chocolate ones. i used almond extract like the recipe said, but i could taste the almond flavor, and sort of alcohol taste too.

maybe i was too heavy handed with it? i never used almond extract before just vanilla........anyone else ever have this problem?

maybe next time i will just use more vanilla instead of the almond.

btw the cupcakes were yummy anyway, the kids ate them all! yes all 12 cupcakes were gone by the end of the day. hubby had 1 i had 1.

Sounds like you just used too much. Try a little less next time. Almond extract tastes different than vanilla, but that's the point. I think tasting it a LITTLE would really enhance the chocolate-y-ness of the cupcakes.

And if the kids devoured them, I think they're probably fine...
