<p>Suitable for a vegan diet</p>

<p>Ok guys, a lot of the measurements in this recipe are to taste, so alter your mix-ins to your taste, and feel free to add anything you think sounds good!<br><br>
2c flour<br><br>
1tsp baking powder<br><br>
1tsp baking soda<br><br>
1/2tsp salt<br><br>
1c "butter"<br><br>
1c white sugar<br><br>
1c brown sugar<br><br>
2 EnerG eggs<br><br>
1tsp vanilla<br><br>
1 1/4 c rolled oats<br><br><br>
I added:<br>
cinnamon<br>
about 1c coconut<br>
about 3/4c hacked up chocolate bars<br>
about 1/2c dried cherries or other dried fruit such as rasins or crasins<br>
a couple handfulls of pecan halves<br><br><br>
Preheat oven to 350<br><br>
In a large bowl, mix your dry ingredients, the first four ingredients listed.<br>
In a seperate bowl, cream the butter with the sugars. Add the eggs, mixed as the package directs, and the vanilla.<br>
Slowly pour the dry ingredients into the wet, and incorperate well. Now add the oats and any of the add-ins desired.<br><br>
I use an icecream scoop to measure the cookies out, onto a greased baking sheet.<br>
Bake for 10-15min, the bottoms should be lightly browned.</p>

These sound amazing! I like toasting the coconut before adding it...I do that when I make oatmeal cookies. <img alt="" class="inlineimg" src="/images/smilies/lick.gif" style="border:0px solid;" title=":lick:">

Thats deffinately a good idea! I wouldnt really say these are oatmealy though.
