Creamy pureed veggie and broccoli soup<br><br>

Suitable for a: vegetarian diet<br><br><br><br><br><br>
1 tbsp olive oil<br><br>
1 large onion, chopped<br><br>
1-2 cloves of garlic, minced<br><br>
1 large carrot, diced<br><br>
2 celery stalks, diced<br><br>
1 large potato, cubed<br><br>
6-8 cups of water or vegetable broth<br><br>
1 15 oz. can of cannelini beans, drained and rinsed<br><br>
2 broccoli crowns, both chopped into small florets and chunks<br><br>
1 cup sour cream or a vegan alternative (like Tofutti Sour Supreme)<br><br>
1 cup shredded sharp white cheddar cheese (optional)<br><br>
salt and pepper to taste<br><br><br><br><br><br>
1. Heat oil in large pot over medium heat.<br><br><br><br>
2. Add onion and saute for 2-3 minutes until softened.<br><br><br><br>
3. Add garlic, carrot, celery, and salt and pepper and cook 2-3 more minutes, stirring often.<br><br><br><br>
4. Add potato and cook 5 more minutes, stirring frequently.<br><br><br><br>
5. Add 6 cups water or broth, rinsed beans, and 1 of the chopped broccoli crowns and bring to a simmer. Lower heat and simmer for 20-30 minutes, stirring occasionally. Add more water during the cooking if it seems too thick.<br><br><br><br>
6. Taste, check veggies for doneness and add more salt and pepper if needed. Once the veggies are soft enough, pull the pot off the heat and either blend the mixture in a blender (be careful--you will need to do this in 2-4 batches, depending on the size of your blender, or you will be covered in hot soup and your kitchen will be a mess!) or use an emersion blender and puree to desired smoothness.<br><br><br><br>
7. Whisk in sour cream or vegan alternative until well blended and the other chopped broccoli crown and bring to a simmer. Simmer until broccoli reaches desired tenderness. Taste and adjust seasoning if needed.<br><br><br><br>
8. If desired, stir in shredded cheese until melted and well blended.<br><br><br><br>
9. Serve and enjoy!<br><br><br><br>
Preparation time (including chopping) is about 1 hour.<br><br><br><br><br><br>
Additional comments:<br><br>
This is good either made vegan or vegetarian. If you make it with the dairy, it's good with a little extra cheese sprinkled on top. I really like eating this in a bread bowl or with any crusty bread.
