Country Style Fried Apples

Category: Side Dishes

Suitable for a: vegan diet

Ingredients:

------------------------------------------------------

8 Granny Smith apples,peeles, cored, and sliced

1/4 c Smart Balance or margarine of choice

1/2 c brown sugar

1 t.cinnamon

1/2 t nutmeg

Instructions:

------------------------------------------------------

melt margarine in heavy skillet,on med-low heat

lay apples in margarine

sprinkle with spices and brown sugar

ccok 15 to 20 minutes,turning as the apples brown

continue till tender,but not falling apart

Additional comments:

------------------------------------------------------

These would be lovely atop a slice of tofurkey.

They are equally fabulous on waffles,or vanilla tofu ice cream!

Mmm I'll have to try it with whole apples!

I've been making this almost every night as a snack- but I cut the apples into small pieces and then "fry" them. And then sprinkle sugar and cinnamon on them

You can eat stuff fried in olive oil on occasion wiyh no ill effects. Definitely not an everday meal. Although extra virgin olive oil is good for your heart so a little every day won't hurt you (as long as you aren't downing the stuff!)
