A flavorful condiment to serve with a vegetarian entree. Yields 1 3/4 cups<br><br><br><br><br><br>
>1/4 tsp. Stevia Extract powder or 3/4 tsp. Green Stevia<br><br>
>1 tblsp. dry minced onion<br><br>
>1/4 tsp. celery seed<br><br>
>1/2 tsp. dry mustard<br><br>
>1 tblsp. cider vinegar<br><br>
>2 tblsp. chopped jalepeno pepper<br><br>
>1/4 cup water<br><br>
>1 1/2 cups yellow corn, fresh or frozen<br><br>
>1/4 cup minced green or red sweet pepper<br><br>
>3 tblsp. fresh lime or lemon juice<br><br>
>2 tblsp. cooked pimento, chopped<br><br><br><br>
Combine stevia, onion, celery seed, mustard, vinegar, jalapeno pepper, and water in a saucepan. Heat to a boil. Add corn and green pepper and simmer 9 to 10 minutes.<br><br>
Remove from heat. Stir in lime juice and pimento. Spoon into a jar, cover and chill overnight to blend flavors.<br><br><br><br>
