copper penny salad

Category: Salad

Suitable for a: vegan diet

Ingredients:

------------------------------------------------------

2 lbs sliced carrots

1 large stalk celery,chopped

1 med green bell pepper,chopped

1 small onion, thinly sliced

1 (10.75 oz) can condensed tomato soup

1/3 c vegetable oil

1/2 c distilled white vinegar

2/3 c raw sugar

Instructions:

------------------------------------------------------

boil carrots till just tender, about 10 minutes or so

drain well

in mixing bowl,combine all veggies and set aside

bring to a boil all liquids ,soup, and sugar

stir well

remove from heat and let cool,10 to 15 min.

pour cooled mix over veggies and mix well,

making sure all mix is well coated

cover, and let marinate overnight

Additional comments:

------------------------------------------------------

The longer this dish marinates, the better it tastes!

Serves best at room temperature.

Remaining marinade makes a very good salad dressing.

I think the carrots are supposed to represent pennies, eh?

Hmm. I never would have thought to put tomato soup in a salad but that just sounds delicious! I think I just found out what I'm having for dinner! Thanks for the recipe
