I know how nutritious they are, I've always appreciated their sweetness and crunch. But I'm kinda burnt out on carrots these days. All the recipes I know for them emphasize sweetness.<br><br><br><br>
Anybody have some cool new recipe involving carrots that's hot/spicy/sour/briny? Come to think of it, this could apply to all the other root veggies, too. Thanks!

I like carrots in stir fries, curries, roasted root vegetables, you can add them to tomato sauces, cheez sauces (for color), carrot cakes and muffins.

I use carrots all the time, but I rarely eat cooked carrots by themselves. Chopped carrots, along with chopped zucchini and chopped onion, is the base of many of my recipes: calabacitas, breakfast potatoes, bean taco mix, and soyrizo stuffing for peppers, to name a few. I also love to put shredded carrots on a veggie sandwich. So there are lots of ways to eat carrots without highlighting the sweetness or being overpowered by the flavor of carrots.

I'm a bit carrot fan too, but if you're tired of them, why not just try something else?

i get in a carrot rut sometimes. then i usually get into a celery rut. then i discover some weird vegetable (jicama! eggplant! sugarsnap peas!) but before long i'm missing my baby carrots. and so goes my very interesting relationship with vegetables...

I love them steamed with parsnips (slice thinly) and then tossed with a little earth balance, brown sugar, and fresh ginger.<br><br><br><br>
I also use carrots a lot in canning, to sweeten slightly without sugar--like in marinara sauce and in salsa.

Grate carrots. Heat some oil and pop some mustard seeds and fresh curry leaves, add the carrots too, and stir a bit. Add to yoghurt with lots of salt, and some coriander leaves/cilantro too.

Here's a new one I plan on trying to see if I can get my dear son to eat more veggies: Carrot and Coriander soup. Calls for a pound of carrots. Also has sunflower oil, EB spread, onion, celery stalk and leaves, potatoes, veggie stock, coriander, chopped fresh cilantro, non-dairy milk, salt and fresh ground pepper. Mmmmm. If I had time I'd make it tonight! oh wait... I need more tators before I can. Okay, maybe later in the week. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br><br><br>
Recipe says this works for several other root veggies, too. Hmmmm! mmmmm!

Jalapeno-pickled carrots<br><br><br><br>
Cover baby carrots or carrot slices with equal parts of water and vinegar. Toss in several cloves of garlic, some Mexican oregano, bay leaf, and salt. Boil until tender crisp. Add diced onion (or pearl onions) and one or more sliced jalapeno peppers. Cook approximately one more minutes, then remove from heat and cool completely. Drizzle with olive oil if desired.

My family eats them the Irish way. Boil 1 carrot, and 1 parsnip til tender then mash. Top with Earth Balance.<br><br><br><br>

I remember seeing a recipe somewhere where a mother used carrots like a hot dog on a bun for her kids. I wish I could remember where I saw it, anyone familiar? I thought at the time that it sounded weird but might be good.

carrot lentil soup!<br><br><br><br>
Just boil carrots + lentils + onion in a big pan of water untill everythings soft etc.<br><br><br><br>
let cool,<br><br><br><br>
throw in a blender...add spices e.g.: curry powder, coriander, pepper salt...<br><br><br><br>
add coconut milk to make it richer..<br><br><br><br>
reheat.<br><br><br><br>
soup!

Delicious suggestions, folks. I'm starting to crave carrots again, just reading your ideas!<br><br><br><br>
In particular: Orapunzel, your carrot/coriander soup idea left me drooling. Any chance you might post your recipe here for your many fans?

Yeah, I can do that. In fact, I've been on a carrot kick myself, lately. I'll see if I can post it by tomorrow. A little crazy busy today. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">
