I'm glad we share the same love of creamy sauces! It can be a challenge for us vegans to get the right consistency sometimes. I see no reason why you shouldn't be able to replace the toffutti with soya cheese! It might be slightly less 'cream' like but I can imagine it would taste just as delicious! You could also add some nutritional yeast and braggs liquid aminos if you wanted an extra cheesy taste to it.

I could add soya cream to the recipe to make it creamier maybe... I'll experiment with creaminess :)
