Hi all,<br>
I hope this is the right place to post this!<br><br>
I'm committing to staying vegan as of November 1 but this time putting the "vegan" in front of the "diet" instead of the "diet" in front of the "vegan" <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D">. That is, I am trying to forego worrying about fat, carbs, etc., and following relatively extreme regimes like the no-added-fat vegan diet regime (great concept but just didn't work for me). So I'm trying to up the ante by taking some time to do some cooking for myself to motivate myself with interesting and tasty dishes.<br><br>

From what I see, it seems to focus on "real foods" (i.e., no meat substitutes, etc) and whole foods and makes vegetables the center, which is what I'm looking for. I'm wondering if anyone here has the cookbook and what you think of it. I don't have a ton of time to spend in the kitchen so I'd like recipes that aren't too time consuming and I also have some limited resources right now (no oven, only a toaster oven and small burner), though that's not going to be my situation forever. As mentioned above, I am also trying to eat as close to whole "real" foods as possible - vegetables, fruits, beans/legume, some tofu (i.e., plain minimally processed tofu), good fats, some nuts/seeds. So I'm not looking for recipes that use a lot of "faux" products, like vegan margarine, vegan mayo, vegan sour cream, etc.<br><br>
Any insights would be most appreciated!<br><br>

I have her book, "the 30 day vegan challenge" and i really like it. I want that book too, it looked full of yummy recipes.
