Am I the only one who uses it as a milk replacement? Why isn't everyone else doing this? I've been using it for years, but I don't think I've ever seen it on here in the rice, soy, almond, oat, whatever milk debate.

Are you talking about fresh coconut milk or the stuff out of the can? Fresh coconut milk, I love as a drink, but can't envision cooking with due to its watery consistency. The canned stuff, on the other hand, is too thick for me to want to use it in the quantities you would generally use milk. I love adding 1/4 of a cup or so to smoothies and curries, though -- imparts a wonderfully rich and creamy consistency.

I love coconut water from fresh YOUNG coconuts. Coconut water from mature coconuts has never tasted good to me... mostly b/c I think it's not been stored right by the time it makes it to store produce sections.<br><br><br><br>
Coconut milk I use comes from a can. I use it mostly for curries and sometimes for Iscreams - yum. But to drink? No... too fatty for me. I'm still trying to lose that last 10 lbs of baby weight. It's yummy, though.<br><br><br><br>
Actually, I rarely drink any "milk". I use it in recipes. Water is my thing.

I can see using coconut milk as a CREAM replacer in cooking, but I can't see drinking it the way I would milk. A brownie and a nice glass of coconut milk? No, thanks. I love the stuff drizzled over sliced bananas and chopped nuts for breakfast, though.

Yup.... I use it in curries and soups, but I get concerned about how much saturated fat I'd be consuming if I consumed it regularly.

I've used it as a cream replacement many times - but as others have said...too thick for a milk replacement.<br><br><br><br>
BTW, it works GREAT as "whipped cream" in one of those whip cream makers with the CO2 cartridges...wooo! Whips up really well that way!

You pour cream (or coconut milk) into the container and pressurize it with a CO2 cartridge... press the lever and presto, you have instant "whip" cream.<br><br><br><br>
OK, I can't explain it too well...but it's cool!<br><br><br><br>
(Same concept as those cans of "spray cream" you can get at the grocery, with dairy whipped cream in them)

Thank you. Simple and good! I used agave and powdered black walnuts. (I ground up the nuts because I just had dental work.) My husband snatched the bowl away and is practically licking it clean, so I guess it's safe to say he likes it too.<br><br><br><br>
Anyone know how long coconut milk stays good for in the fridge? My container may specify this, but it's in Thai.
