Chocolate Pudding

This recipe is suitable for a: vegetarian/vegan/raw diet

Preparation Time: 15 minutes

Serves: 4

Ingredients:

2 cups coconut meat (young thai coconuts)

3/4 cup coconut water, at room temp

1/2 cup maple syrup

1/3 cup agave nectar

1/2 cup cocoa powder

2 table spoons vanilla extract

1/4 tsp. sea salt

Instructions:

Puree all ingredients in a blender until completely smooth, stopping to scrap the sides as necessary. Pour into a bowl or large wine glasses (for serving later) and allow to chill (will firm) Can top with raspberries and fresh mint or nuts.

First of all, this is the most spectacular thing you will ever put into your mouth. Seriously
It is incredibly rich & creamy and healthy to boot. The odd thing is, you would think it would have an overpowering coconut taste, but not at all. It tastes like a rich, dairy pudding.

The only complaint is that it takes MANY coconuts to come up with 2 cups. At least the ones i used had a very thin layer of meat. But it is so worth the hassle. In fact, every time i make this i double the ingredients b/c it doesn't last long..

yeah, the book where i got this recipe has many where they add a scoop of avocado to shakes & things to make them creamy, but i think 2 cups of avocado would be a lil overpowering. if you give it a try, let me know how it turns out tho. but you should at least try it once with the coconut. you won't regret it


btw, this is the book i got it from. the pictures in this book are nothing short of seductive and the authors own the restaurant Pure Food & Wine in NYC.

oh i'm definitely going the coconut route for the first time in making this.

i can't find raw cocoa powder around here, at least the last i looked. i'll have to check the health food store again.

yeah, the book admits that the cocoa isn't exactly raw, but they recommend either substituting carob or using partial cocoa and adding some raw cocoa beans to the blender for a higher percentage of raw.

* Melted butter, to grease

* 150g (1 cup) self-raising flour

* 100g (1/2 cup) caster sugar

* 2 tbs cocoa powder

* 125ml (1/2 cup) milk

* 50g butter, melted

* 1 egg, lightly whisked

* Thickened cream, to serve

Chocolate sauce

* 155g (3/4 cup, firmly packed) brown sugar

* 2 tbs cocoa powder

* 375ml (1 1/2 cups) boiling water

Method

1. Preheat oven to 180°C. Brush a 1.5L (6-cup) capacity ovenproof dish with melted butter to lightly grease.

2. Combine the flour, sugar and cocoa powder in a medium bowl. Make a well in the centre. Combine the milk, butter and egg in a large jug. Gradually pour the egg mixture into the flour mixture and stir until well combined. Pour into the prepared dish and use the back of a spoon to smooth the surface.

3. To make the chocolate sauce, sift the sugar and cocoa powder into a bowl. Sprinkle over the pudding mixture in the dish. Gently pour the boiling water over the cocoa mixture.

4. Bake in oven for 40-45 minutes or until a cake-like top forms and a skewer inserted halfway into the centre comes out clean. Set aside for 5 minutes to cool slightly. Serve with thickened cream, if desired.
