I found a similar recipe on veg web but wanted to share anyway. I made this for my DH and we both loved it.<br><br><br><br>
filling:<br><br>
1 can chickpeas<br><br>
2 Tbsp vegenaise (more or less - to your taste)<br><br>
1 tsp mustard<br><br>
1 pickle, diced<br><br>
1 tsp ground flax seed<br><br>
fresh ground pepper (& lots of it!)<br><br><br><br>
In a medium bowl, mash the chickpeas (a pastry blender works really well). Then, add all the other ingredients & stir until well mixed.<br><br><br><br>
makes 2 - 3 sandwiches.<br><br><br><br>
I toasted some rye bread, put this filling in the sanwich, and threw on some lettuce. super yummy.<br><br><br><br>

I make something similar, and it is very good! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br>
I've been wanting to try vegan mayonaise, but the stuff is sooo expensive! Four bucks for a small jar. <img alt="" class="inlineimg" src="/images/smilies/shocked.gif" style="border:0px solid;" title=":eek:"> How do guys afford it? <img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":(">

Whole foods carries a vegan canola mayo that is like $3 for a big jar and is super good. Look for something that's not a big name brand.
