Perhaps my memory is getting rusty, but this doesn't sound like Challah to me. To be Challah, you have to have egg in it. From what I understand, there is ordinary bread, and there is egg-bread, ie, Challah.

If Chef Deb says it will work, then it will.

All of the recipes I have tried of hers so far are wonderful.

I'm sure it will work. You'll have bread. And it may taste wonderful. It just won't taste like challah, and it won't be challah (not that I like challah anyway.)

"Would an egg-replacer mess it up any?"

Egg replacer works well in any recipe where, if you simply leave out the egg, the recipe still works.

thanks for the link zimngir! I will definitely try it. I'm sure it won't taste exactly like traditional challah, which yeah, is pretty much just egg-bread. But I just wanted the closest I could get, and you are right, Chef Deb is usually pretty amazing. Thanks for the help!
