There are some recipes I've found that are not--or not necessarily--veg*n. So put your thinking cap on. Do not just follow them blindly, as though you were a zombie. Omit or substitute inappropriate ingredients.

But you can find four or five recipes involving carmelized onions here:

http://www.recipesource.com/cgi-bin/...melized+onions
Have a bread machine?
Adding 1/4 cup of cooked/carmelized chopped onions makes great onion loaf.

I'll also carmelize onions in a skillet, and then throw in veggies w/ soy sauce for for a stir fry. The little bits of onion stick to everything and add a great deal of flavor.
Cast iron is my favorite for this. Lightly coat with oil, put onions in when hot, turn heat down and cover for about 5 min, add enough water to deglaze and sprinkle with a bit of sugar, cover and cook about 10 min more.
I added these to quinoa with a bit of peanut butter thinned with water and some peas.
