I invented this tonight with stuff I had in my house. It turned out amazingly fragrant and delicious, I wanted to share. It costs about $5 to make (if you have all the spices already), cooks all in one pot, and takes 20 minutes to make.<br><br>
In a little bowl, mix together these spices:<br>
1 tsp tumeric<br>
1/2 tsp cumin<br>
1/4 tsp garlic powder<br>
1/4 tsp cinnamon<br>
dash cayenne pepper<br>
dash salt and pepper<br><br>
In a medium stove pot, whisk together a can of coconut milk (the kind you cook with, not drink), 2 3/4 cup veggie broth, and the spice mix. Add in 2 cups jasmine rice. Bring to a boil, reduce heat to medium, cover and cook 14 minutes (do not open lid). Let stand 5 minutes. Stir in 1 cup cooked peas.<br><br>

<p>Sounds good to me - one for the recipe book - it's all stuff I usually have at home so perfect for one of those "I can't really be bothered cooking today" days. I'm mentally serving it with mushroom croquettes. Thanks for sharing!</p>

<p>I didn't know there are 2 different kinds of coconut milk. Maybe the difference is that you can get it either sweetened or unsweetened?</p>

<p>In my local asian market they sell two kinds - on the can it either says for cooking or for desserts.</p>

<p>Oh wow! Finally got round to making this! I served it with homemade veggie burgers (carrot and pinto bean among other things) Excellent!. I made the whole ammount and have put some in the freezer to see how it goes from frozen - should be fine!
