I invented this tonight with stuff I had in my house. It turned out amazingly fragrant and delicious, I wanted to share. It costs about $5 to make (if you have all the spices already), cooks all in one pot, and takes 20 minutes to make.

In a little bowl, mix together these spices:
1 tsp tumeric
1/2 tsp cumin
1/4 tsp garlic powder
1/4 tsp cinnamon
dash cayenne pepper
dash salt and pepper

In a medium stove pot, whisk together a can of coconut milk (the kind you cook with, not drink), 2 3/4 cup veggie broth, and the spice mix. Add in 2 cups jasmine rice. Bring to a boil, reduce heat to medium, cover and cook 14 minutes (do not open lid). Let stand 5 minutes. Stir in 1 cup cooked peas.

Enjoy!

Sounds good to me - one for the recipe book - it's all stuff I usually have at home so perfect for one of those "I can't really be bothered cooking today" days. I'm mentally serving it with mushroom croquettes. Thanks for sharing!

I didn't know there are 2 different kinds of coconut milk. Maybe the difference is that you can get it either sweetened or unsweetened?
