actually i love carbs. too much.

can people do me a big favor and post some of their favorite meals that aren't carb heavy? toast for breakfast and pasta for dinner just aren't going to cut it anymore, i need more variety if i'm going to be healthy. but all my favorite foods are carbs..bleh.

Vegetable & chickpea curry

Soup

Yogurt with berries

Trail mix

Fruit smoothies

Fruit salad with nuts

Lentil dhal

Burritos

Scrambled eggs (or tofu) with veg

Big salad

Refried bean tacos

Black bean and corn salad

I'll add anything else I think of later, hehe.

Why are you wanting to avoid carbs anyway?

Toast for breakfast and pasta for dinner can be part of a very healthy meal if you use whole grain products.

Most vegetarians use quite a few (healthy/unrefined) carbs in the form of whole-grain pasta and bread (and rice and other grains) as well as fruit. If your diet is balanced with other foods and there's no medical reason (diabetes) to avoid them, carbs are perfectly OK and the big "no-carb" fear is completely outdated hype and without any scientific basis.

I just have to ask - if eating a healthy diet with whole grains and minimal processed or refined foods, what is "Too much?"

If you like carbs in the form of refined sugars and white flour and processed foods "too much"... well, that's a different question entirely.
