Caraway Rye, bread machine<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>

1 cup water plus 3 tablespoons<br><br>
1 tablespoon Grandma's light molasses, Steen's Cane Syrup, or similar substance such as Dulce de Panela dissolved in enough water to make a molasses consistency.<br><br>
2 tablespoons sunflower oil or canola oil<br><br>
1.25 teaspoons salt<br><br>
2 teaspoons active dry yeast. Regular, fast-rise, or bread-machine type, it makes little or no difference.<br><br>
1.5 cups unbleached white flour<br><br>
1.5 cups whole rye flour<br><br>
optional, remove a tablespoon total of the other flours, and substitute a tablespoon of wheat germ<br><br>
2 tablespoons of whole caraway seeds.<br><br><br><br><br><br>
Instructions:<br><br>

This makes an approx 1.5 pound loaf. Bread machines maximize the rise so adding extra gluten is not necessary.<br><br><br><br>
Measure flour and if necessary allow to warm to room temperature. Add salt. Keep a bit more flour on-hand in case the dough is too soft.<br><br><br><br>
Put all the liquids together in a cup and heat to 80 degrees F in a microwave. Yes of course you could heat them in a pot. Place in bread machine's bread pan. Add flour. Put yeast in indentation made in flour. Set machine for 1.5 pound loaf, medium color crust. Start machine. If dough looks a bit too heavy add water, 2 teaspoons at a time. If too soft, add white or rye flour, 2 teaspoons at a time.<br><br><br><br>
Check machine's schedule of operations in user's manual. 5 minutes before kneeding ends, add caraway seeds.<br><br><br><br>
Let cool 10 minutes before dumping out of of bread pan.<br><br><br><br><br><br>
Additional comments:<br><br>
------------------------------------------------------<br><br><br><br>
Serve with avocado and a bit of salt. Cherry tomato halves.
