One thing I miss so bad is caprese salad. Any ideas as to how to recreate the mozzarella?

I'm thinking about just replacing the mozzarella with soft or medium tofu as an easy, quick meal.DEF wanna try this ^ recipe though...yummmmmmmmy.

I want to try this recipe too!
