Candied Nuts

Suitable for a: vegan diet



1/4 cup margarine

1/2 cup maple syrup (or sugar)

1-2 tablespoons cinnamon

1 teaspoon nutmeg

1-2 teaspoons vanilla extract

1/4 teaspoon salt

3-4 cups of your favorite nuts (I use almonds or pecans)



Preheat oven to 350°F.

Stir together margarine, maple syrup or sugar, cinnamon, nutmeg, salt, and vanilla in a saucepan and bring to a boil. Add nuts and cook, stirring often, 3 or so minutes.

Spread nut mixture onto cookie sheet lined with aluminum foil or parchment paper. Bake for about 12-15 minutes, stirring the nuts halfway through the bake time. Remove from oven, and let cool. Break apart clusters and store in an airtight container.
