what methods of cooking will you have availiable?

we made stuffed pitas several times on our last camping trip. we brought along a small jar of dressing and tons of fresh veggies. on the night we had a cooking stove we cooked some of the veggies while we left others raw. we also brought a container of hummus and pitas. we had PB&J w/ fruit. we made veggie burgers and veggie dogs. we have taken a pot and made spagetti from a jar easily. we generally have some sort of beans and rice dish. we make tin foil meals by putting potatoes and veggies wrapped in tin foil with olive oil then cooking it over the fire.

if a camping stove or cook top is possible we also have pancakes at least once. i just use a mix that only needs water added. we bring along nuts and other munchies. now that i have found yves lunch slices we will probably bring them along next time. tofu scrammble would be easy if you have a pot.to cook it in.

hmmm when i think of more i will post again.

I'm glad this question was asked. I'll be going camping this summer for the first time since becoming vegan (actually, the last time I camped was even before I was vegetarian over 9 years ago). Everyone else is a meat-eater, so I'm gonna bring my own little grill and utensils. Other than veggie burgers and dogs, I was trying to think of other things. The potatoes and veggies in tin foil idea sounds good. Some veggie bacon or canadian bacon (Lightlife makes it I think) would be good with breakfast. I was also thinking of bringing some cans of Bush's vegetarian baked beans....I love that stuff.

If you're really stuck, peanut butter and jelly sandwiches are a decent fallback position.

I usually bring several cans of soup, baked beans, some potatoes, and a pack of veggie dogs if I have a cooler. All of that can be cooked over the camp fire.
