i'm making this for dinner tonight and felt i had to share the receipe. it's so yummy and wickedly easy to make.<br><br><br><br>
oh, i don't know the precise amounts of anything i make but this can't be messed up.<br><br><br><br>
1 box of whole wheat penne paste cooked al dente<br><br><br><br>
1 package of extra-firm herbed tofu, diced<br><br>
1 large broccoli cut into small flourets<br><br>
5+ mushrooms (if using white button), sliced<br><br>
lots of olive oil<br><br>
cajun seasoning to taste (LOTS)<br><br><br><br>
heat the olive oil in a skillet/wok. add the tofu, broccoli and mushrooms until tofu is slightly browned and broccoli is bright green.<br><br><br><br>
add cooked pasta. toss with more olive oil and cajun spice.<br><br><br><br>
enjoy!

i use "president's choice" which is a store brand name for Zehrs and No Frills. if you don't live in Canada, i'm sure you have no idea what i'm talking about <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

Is herbed tofu the same as baked tofu here in the states?<br><br><br><br>
If so, Muzicfan, you can make your own...<br><br><br><br>
Freeze firm tofu for a few days (or longer), then thaw<br><br>
Squeeze out as much excess water as you can (once the tofu is thawed, it is much chewier and can be wrung out with your hands)<br><br>
Marinate in whatever you want--for cajun, I'd probably go with some vegan worcestire sauce, tabasco sauce (or other hot sauce), little bit of liquid smoke, and maybe a dash of vinegar.<br><br>
Slice tofu then broil for about 5 minutes on each side.
