Caesar Salad<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
1 large head romaine lettuce, chopped<br><br>
2 large cloves garlic, minced<br><br>
Juice of 1 large lemon<br><br>
4 Tbsp extra-virgin olive oil<br><br>
1 Tbsp apple cider vinegar<br><br>
1 Tbsp Dijon mustard<br><br>
freshly-ground pepper<br><br>
1/4 cup freshly grated Parmesan **OR** 2 Tbsp vegan soymesan<br><br>
Croutons (optional)<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
Rinse lettuce & dry with a towel or salad spinner. Set aside.<br><br><br><br>
In a large bowl, mix garlic, lemon, olive oil, vinegar, mustard, black pepper. Whisk. Add the lettuce, toss to coat well. Add the par/soymesan and toss again. Top with (optional) croutons.<br><br><br><br><br><br>
