Here's a recipe for butternut squash soup i hope you'll all try and like:
1 med. size butternut squash,cut in pieces
2 Cups veggies stock
1/4 cup smooth peanut butter
1 1/2 tsp. curry powder
2 cups soy milk
salt to taste
- in large saucepan cook squash in veg broth until tender(approx. 15-20 min)
- cool slightly,add peanut butter,curry powder and process or blend until smooth(adding more stock if necessary)
- return to saucepan and add soy milk, heat through, do not boil
-add salt to taste
-enjoy
this recipe is quick,easy and always workd for me.
