Here's a recipe for butternut squash soup i hope you'll all try and like:<br><br><br><br>
1 med. size butternut squash,cut in pieces<br><br>
2 Cups veggies stock<br><br>
1/4 cup smooth peanut butter<br><br>
1 1/2 tsp. curry powder<br><br>
2 cups soy milk<br><br>
salt to taste<br><br><br><br><br><br>
- in large saucepan cook squash in veg broth until tender(approx. 15-20 min)<br><br>
- cool slightly,add peanut butter,curry powder and process or blend until smooth(adding more stock if necessary)<br><br>
- return to saucepan and add soy milk, heat through, do not boil<br><br>
-add salt to taste<br><br>
this recipe is quick,easy and always workd for me.<br><br>
