Hey, just wanted to see if I could get some advice on everyone's favorite vegan breakfasts. I am new to a completely Vegan lifestyle and breakfast seems to be the hardest meal of the day for me. I know there are a lot of options but I wake up and draw a blank. Most of the time I end up eating homemade granola and soy or almond milk. I add fruit to the mix but I want more variety! Any advice or suggestions would be greatly appreciated!

Mmm, breakfast.

Granola and fruit are great but there are a bunch of other things you can make as well. Pancakes, tofu scramble, hash browns, oatmeal, muffins, green smoothies, etc.

You don't even have to limit yourself to traditional "breakfast" foods, lots of cultures eat things we would consider dinner food in the morning and it's still just as tasty. Nothing like a delicious breakfast curry

Here are some links to recipes and ideas, hope that helps!

I tend to alternate between fruit and yogurt, cereal with fruit and almond milk, smoothies, and bready-y things like bagels and English muffins with Earth Balance or Jam. Stop on over to the "My vegan breakfast, lunch, and dinner" thread and check out some pictures of what folks eat for breakfast. faded_amaranth makes an amazing variety of baked oatmeal!

I eat Earth Balance and peanut butter on a bagel for breakfast almost every day. Filling and delicious : )

I really like almond/cashew butter on a toasted whole wheat bagel for breakfast. This morning I had a delicious tofu scramble with loads of veggies, hash browns and field roast sausages. Every once and a while I'll make pancakes, oatmeal, or french toast.

I like Food for Life's English muffins with almond butter and peach jam, or Better Than Cream Cheese and a thick slice of tomato with black pepper. Oatmeal made with almond milk and cinnamon is divine. I love Barbara's Shredded Wheat! I also love leftovers for breakfast - especially leftover vegan pizza.

If you're feeling uncertain, a protein drink is always acceptable as a side thing.

Things I tend to eat for breakfast:
- hot oatmeal (sometimes with additions like soymilk, agave, berries, nuts)
- cold breakfast cereal with soymilk or almond milk
- waffles (get recipe here: http://www.vegansoapbox.com/sunday-i...y-of-the-week/ )
- vegan donuts (locally available)
- toast with panut butter, almond butter, or jam
- vegan breakfast patties/ sausages
- tofu scramble
- breakfast potatoes (just panfried potatoes with onions and bell pepers and spices)

Edit to add:
I forgot, I wrote a list of 101 vegan breakfasts here...

Wow, it looks like a lot of us eat similar things.

My list:

- Oatmeal
- Almonds or walnuts
- Peanut or almond butter on toast, tortillas, or bagels
- Fruit of any kind
- Tofu scramble with corn tortillas
- Cereal with almond, soy, or rice milk (other milks work as well)

My favorite thing to eat/drink is a protein shake. I like them because I can always mix it up with what I put in them. One morning I'll do peanut butter and banana and the next will be blueberries, strawberries, and raspberries. Using soft silken tofu or a banana as a base gives it thick, creamy consistency. I also use frozen fruit when it's out of season. It's also very quick and easy to prepare and consume if you're in a rush.

Most of the time I have granola with soy milk and dried fruit. But, when I have more time and funds, I'll make things like tofu scramble with corn tortillas and fresh salsa or polenta with cinnamon and maple syrup. Or fried potatoes with fresh salsa and avocado, vegan pancakes or bisquits with jam, yummy.
