Does anyone know of any books that focus on veg*nism, specifically in regards to environmentalism and sustainability? I'm not looking for something that covers all aspects of the diet - health, animal rights, etc.
This is what I hope for the focus of my career to be, so I want to get started with the right literature.

I haven't read it yet but I think Just Food: Where Locavores Get It Wrong and How We Can Truly Eat Responsibly
by James E. McWilliams fits the bill here.

I'd also suggest portions of Eating Animals by Jonathan Safran Foer. It's an easy read with lots of solid info.
