Black Bean Burgers

Category: Sandiwches/Burgers

Suitable for a: vegan diet

Ingredients:

------------------------------------------------------

1 15-ounce can black beans, drained

1/4 cup diced and sautéed onions

2 slices multigrain bread, finely crumbled

1/2 teaspoon each of garlic powder, black pepper, and onion powder (optional)

1/4 teaspoon salt (optional)

1/2 cup cracker crumbs

Instructions:

------------------------------------------------------

In a large bowl, mash the drained black beans. Add the sautéed onions, crumbled bread, and spices. Mix thoroughly. Add about 1/4 cup of cracker crumbs (or just enough to be able to form patties from the mixture). Using your hands, form the mixture into 1/2-inch thick patties. For a breaded burger, gently coat each patty with more cracker crumbs.

In a lightly oiled non-stick pan, fry both sides of the patties. Serve with a garnish of lettuce, tomatoes, avocado, and any other condiments on buns or over a bed or rice.

Michael,

These were sooo delicious! Thank you so much for posting it!

If you haven't tried this recipe and want to, do it now!! you won't regret it!

I would suggest making it thinner than the one in my picture, or cooking it longer for a firmer burger. The ones I made were mushy-ish, but still sooo delicious!

I made some earlier this week. They fall apart easily. I read online afterwards that it helps to refrigerate the patties before cooking them - supposedly they hold together better.

Anyway, they sure are tasty with avocados!

i tend to make veggie burgers with whatever i've leftover in my fridge

i rarely measure anything, and just dump whatever into a big bowl, and anything that's not quite soft enough i'll sautee for a few minutes

i almost always include 1 finely shredded carrot and 1 finely shredded potato...the starchy, moistness helps bind everything together, and the breadcrumbs help too.

i usually use a bunch of either beans of any kind, or corn kernels as my primary ingredient, but dump just about any vegetable in so long as everything's finely chopped, and relatively soft enough to form patties out of.

Gonna do Romac's version at lunch today... to use up some of last week's veggie purchases that need to be eaten... and am prepping some black beans for dinner. Need to rinse and parboil, then toss in that crockpot. Woo!

LOL, ok so these would have turned out WAAAAAAAAAY better if my son hadn't been twirling around my legs, distractinf me while I added the pepper... opened the wrong side of the huge container, and dumped like 1/3 CUP in!! I knew I should have done the freshly ground thing, but ugh! Got out what I could, but WOW were they spicy! (in that random pepper way, not in the good, Jalepeno way)

So, I couldn't get the kids to eat them.. but I finished mine. Pretty good, and I'm making the same basic thing tonight, but with red beans & pinto beans. Thinking of putting taco seasoning in there when I mash the beans. Mmmm, taco burgers...

I made the ones from the recipe last night, and I thought they were pretty good. I added more garlic than the recipe called for, and I also added some cumin. I can't fathom beans w/o cumin!

Anyway, all but one of them stayed together with no problems. I think next time I would add even more garlic, cumin and red pepper for an added kick.

I wonder if one could replace the onions with some other veggie like red peppers or carrots... I can't stomach onions.

Re-did the recipe a second time, using small red beans & pinto beans (I was out of black) and it was WONDERFUL. SOOOOOO good. My Omni in-laws even liked it!! Including mr. carnivore himself, BIL. HAHAHA. Will definately be making this in the future. Heck, I'd make it tonight if it wasn't so late to get it started.

I tried replacing them with mushrooms this evening...the first time I made a homemade vegan meal.

they came out tasting pretty good, but I made them too thick. (middle came out kinda gooey) but maybe I could have added more bread crumbs or crackers.
