This makes me all kinds of happy. I love Tofutti products. Oh I look forward to that. Funny, the website says even dairy people find ricotta a difficult and temperamental cheese to make. I used to make my own all the time before I went vegan. It was mozzarella that was a pain.

Already make my own ricotta-ish replacement for lasagna using tofu, nooch, and a couple herbs and spices but more vegan products on the shelves is a good thing. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

Yes, I find this is the easiest one to sub in, tastes just like dairy ricotta and I'm sure will be much less expensive than the Better than Ricotta. Nonetheless, exciting that vegan products are expanding! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"> I would like to see them try a "Better than Feta" next.... <i>that</i> is not easy to replicate!

This may be good. I haven't been terribly pleased with Tofutti standing alone, but mixed in recipes it works pretty well. But, we've made it as well using silken tofu and it was good. But, maybe it'll be good?!
