better than bouillon no chicken.

I saw this recipe online
http://www.veganappetite.com/2009/02...urry-lime.html

Wingy Seitan

1 Tbsp Bryanna's chicken powder
1 cup vital wheat gluten
1 Tbsp all purpose flour
1 Tbsp whole wheat flour
1 Tbsp tapioca
2 Tbsp nutritional yeast
1/2 tsp onion powder
1/8 tsp white pepper
2 cloves garlic, crushed
1 Tbsp olive oil
1 cup broth (cold)
1/2 tsp kitchen bouquet
1/2 tsp Better than Bouillon No Chicken

Is there something else i can use if I don't have Better than Bouillon without effecting the taste? The first ingredient on the list is chicken powder, can i just put more of that? (i have bill's best chiknish powder)

I doubt that missing 1/2 a teaspoon of the boullion would affect the flavor much. I say try it with an additional 1/2 teaspoon of the chicken powder.

Don't forget salt! Bouillon is very salty. You could easily use 1 tsp of Kitchen Bouquet instead of 1/2 tsp plus a sprinkle of salt and be done with it.

Better Than Bouillon is low sodium. That's one of the reasons it's "better than".
I'd just sub any other vegan bouillon if I were you.

Yes. I am aware of this; working as a chef, this is something that is used in frequently as a "shortcut" and I have a jar right here at home as well.

It is not sodium free and it tastes salty. That's why I said a "sprinkle" of salt would do the trick to replace it along with the additional 1/2 tsp. of "Kitchen Bouquet".

1/2 a tsp of "Better Than Bouillon" in the flavor the recipe calls for has 335 mg. of sodium. http://www.superiortouch.com/retail/...o-chicken-base

Using a regular vegan bouillon would make it saltier, to be sure, which, in this case, wouldn't necessarily be a bad thing, taking the rest of the recipe in to consideration.

Quote:

i have Bill's Best Chik'Nish, 1 teaspoon only has 242mg of sodium, i guess it's perfect, even less sodium than "better than".
